Oaty Caramel Sesame Bites
These wholesome little bites have a rich toasted caramel flavour with a delicate sesame crunch. Made with simple pantry ingredients, they’re naturally sweetened with maple syrup and contain no dates or dried fruit.

Ingredients - makes 18 to 20

1½ cups Remedy Kitchen Milled Oat Porridge

½ cup almond flakes

½ cup desiccated coconut

½ cup amaranth puffs

¼ cup almond butter

¼ cup coconut oil, melted

3 tbsp pure maple syrup

For rolling

Black sesame seeds, white sesame seeds, or a mixture of both.

Method

Preheat the oven to 160°C.

Spread the almond flakes onto a lined baking tray and toast for 7 minutes, or until lightly golden. Allow them to cool completely. (This step is optional, but it creates the delicious toasted caramel flavour that makes these bites so special.)

Add the toasted almonds, Remedy Kitchen Milled Oat Porridge, and desiccated coconut to a food processor. Process until the mixture resembles a fine crumb.

Transfer the mixture to a bowl and stir through the amaranth puffs.

Add the almond butter, melted coconut oil, and maple syrup. Mix well until the mixture comes together.

Roll generous tablespoon sized portions into balls. If the mixture feels a little dry and doesn’t hold together, add a small drizzle of extra maple syrup and mix again.

Roll each bite in black sesame seeds, white sesame seeds, or a combination of both.

Refrigerate for at least 2 hours to firm before serving.

Store in an airtight container in the refrigerator and enjoy as a wholesome snack whenever you need a little pick-me-up.
