Has Spring sprung yet? The April showers are here, so May flowers should be forthcoming. It feels like Spring, alright. David here, with the weekly sausage report, and this week we're keepin' it fresh and green with more of the famous Garden Party chicken sausages; the highly brunch-able The Lakeview; and lastly the ever-popular Actually, A Pretty Big Dill!

First of all, a CORRECTION from last week's newsletter. I got it all mixed up folks. Last week was the final indoor Uxbridge Farmers Market (although the outdoor one starts real soon), and we have ONE MORE WEEK of the Terra Greenhouse Winter Market this Saturday from 10am-3pm. See you there.

Before that, some pop up action! Tomorrow night we'll be hanging with our friends at Common Good Beer for a long-overdue pop up. Always good to be up in Scarbs and we have another one coming up in about a month too, so keep your eyes open for that. Located at 475 Ellesmere Rd., we'll be grilling from 4-8pm.

Garden Party
(NOTE: Available for pick up midday Friday)

This is a succulent chicken sausage packed with herb-errific flavour. Tarragon, basil, parsley, chive and more, with garlic and black pepper. A family favourite and a very versatile sausage that's excellent hot off the grill or pan, but equally delicious served chilled and sliced for charcuterie.
(100% chicken in beef-derived collagen casing. Contains garlic and onion.)

Suggested Side Dish: Grilled vegetables and rice; mushroom risotto; sauteed green beans with dill and roasted red-skinned potato. To be honest, you could have this sausage with almost anything imaginable as it has a nice, mild flavour that matches well with many different cuisines and dishes.

Suggested Drink Pairing: Light, refreshing drinks like Prosecco/Cava, gin & tonic, mojito, wheat beer/weissbier, etc.

Actually, A Pretty Big Dill

A really flavourful and unique profile that comes all the way from eastern Europe and western Russia. Dill, caraway, and dill seed at the forefront, backed up by some garlic and black pepper. Equally good either hot or cold.

Suggested Side Dish: Try it as the protein in borscht. Alternatively alongside some potato/cheese pirogis and green veg. Also serve chilled and sliced as charcuterie or on a sandwich with hard boiled egg!

Suggested Drink Pairing: New Zealand or California Sauvignon Blanc will play nicely with the herbaceous flavour here, or have them with a gin martini or Bloody Caesar.

The Lakeview

Feel like you're brunching at the cottage with this delectable breakfast sausage. Apple, currant and cinnamon with a hint of savory and a touch of tangy sweetness.

Suggested Side Dish: Literally any breakfast combination but especially eggs with runny yolks, or Benedict.

Suggested Drink Pairing: Fresh OJ and soda; strong coffee; or a mimosa if you're feeling saucy.

Good Friday to you all, and a very good Friday it is. David here, and lots to discuss so let's dive right in.

First of all, we have a couple special events this weekend to blab about, starting with TODAY at Great Lake Brewery in Etobicoke we are pleased as punch to be back for yet another edition of their annual Hop n Shop Spring Marketplace! We were privileged to be a part of the very first one of these way back in 2022 and it's always a pleasure to be there feeding the thirsty masses. Lots of great vendors there with live music, the Easter Bunny, and more. All you West Enders should pop down for a beer and a sausage if you know what's good for you! Noon-4pm at their brewery location (30 Queen Elizabeth Blvd, Etobicoke).

Then, tomorrow we have our weekly participation in the Terra Greenhouse Hamilton Winter Market from 10am-3pm. Meanwhile, back in the GTA we'll be hanging with the Easter Bunny one more time at the 4th Annual Easter MRKT in Mimico Square! Head on over to 2445 Lake Shore Blvd W. anytime between 11am-4pm and say hey!

Baja Ya Ya

Cumin, oregano, annatto, and paprika take up the forefront with a little kick of smoky chipotle spice bringing up the rear. We're not going to say that this is a "taco-flavoured" sausage, but it doesn't not taste like tacos either. 
(100% pork. Contains onion and garlic.)

Suggested Side Dish: Make some spicy rice, with diced tomato, black beans, salsa, sour cream and cheese and you've got yourself a next level tasty taco bowl.

Suggested Drink Pairing: A crisp cerveza, or a margarita on the rocks.

Louka+Niko Send Their Regards

Here we have a Greek Loukaniko style sausage for those who want to get in touch with their Hellenic side. The flavour profile on this one is pretty straightforward. Orange, fennel/anise and garlic are the holy trinity when it comes to this recipe, and we're not about to anger the gods by deviating!
(100% pork. Contains garlic.)

Suggested Side Dish: Slow braised potatoes and grilled veg; risotto primavera; or try as a breakfast sausage with eggs and toast.

Suggested Drink Pairings: A couple options here. An off-dry Muscat would be nice, but if you prefer dry wine go for a riesling. An Ouzo lemonade would be great too.

Monk's Delight

Generous chunks of shiitake mushroom, Swiss Emmentaler cheese, and sun-dried tomato make up the holy...er, I mean holey trinity of flavours at the forefront, with basil, black pepper and hints of garlic and onion in the background. Rich and earthy with floral and bright notes bring you closer to divinity.
(100% Pork. Contains dairy, onion, and garlic.)

Suggested Side Dish: Leafy greens like chard or collard greens sauteed in white wine and minced garlic, with gnocchi. Or include this sausage as part of an omelette or quiche for brunch.

Suggested Drink Pairing: Pinot noir is by far the best pairing for this flavour, but a Sangiovese makes a great option as well. A smoked abbot ale or a hoppy IPA will work very well too.
