New salad recipe just droppedddd🌿🍍🥑✨🌶️
If you’ve been lucky enough to eat tacos al pastor in Mexico, you’ll know the vibe 💅🏻
Inspired by the iconic taco al pastor (my personal fave), I’ve put together this prep bowl with chicken mince ‘pastor style’, lime and coriander rice, homemade fresh guacamole, and a pineapple salad which complements it all perfectly just like an authentic taco al pastor 🤌🏽
Same flavours, better ingredients, highhhhh fibreeeee 🌿🌿🌿

Birriaaaaaa🇲🇽
Birria is beef slow cooked in a sauce made up of different Mexican chillies, tomatoes, spices, onions…
It’s traditionally eaten with tortillas, taco style, often fried again in a pan with cheese and always topped with fresh onions and coriander. The leftover sauce is usually usually used for dipping 🔥
The whole idea of my prep is that you get to eat fun things like this without having to compromise on nutrients. That’s why I do my birria with chipotle sweet potato cubes, charred corn and peppers for extra fibre, and minced beef. I dish it up still ‘brothy’ so you don’t miss out on any of the flavour 🙏
I pride myself on authentic Mexican cooking since I studied there and learned so much (feel like I haven’t mentioned it in a while🤣)

Let’s talk ingredients 🥥
One of the main pillars of my brand is I don’t compromise on quality. I have to choose extremely carefully what I put on the menu to make sure that I can pursue a recipe with clean, high quality ingredients.
This is particularly difficult with my overnight oats, since it’s easy to get swooped into the mindset that I should be following the latest trends, wondering if making ‘birthday cake’ flavour will make people buy more🤣. But in all honesty, that’s not my brand - I work hard to put together interesting flavour combinations that won’t bore people, but also that aren’t made from any old rubbish.
That’s why in this week’s oats flavour, mango and coconut, I’ve opted for this organic coconut milk. You wouldn’t think so, but it’s actually really hard to find coconut products that aren’t full of texture additives and flavours. It might cost more, but you pay for quality ✨

A sweet soy glazed salmon fillet with crunchy Asian vegetables and chopped noodles all tossed in a homemade creamy miso dressing 😭😭😭😭

I had my first hygiene inspection last week and after an antsy week of waiting, my 5 star rating came through the post this morning!!
So glad I’ve had my hygiene inspection now and can finally show proof of my high standards 🥹
Running a biz on your own can be so challenging, but wins like this, which show I’m doing everything right, really mean a lot!!
