I’ve been trying to perfect the art of cooking the tortilla de patatas (Spanish omelette). Just 3 ingredients: potatoes, onions & eggs, fried in olive oil with salt & pepper (I add a couple of dashes of smoked paprika). Here’s one of my recent attempts. Came out nice. Will post more future tries if there’s any interest
