It was the weekend and I did not have many vegetables for my salad except for beetroot & zucchini. Thought of doing a beetroot halwa since I had some cashew butter also but then I decided to experiment.
Used a peeler to make thin, flat strips of zucchini. Blended the chopped beetroot with some dates with very little water.
Made a cashew cream by adding little water to the cashew butter.
On the zucchini strip, spread a little cashew cream, added the beetroot puree & rolled the zucchini.
Voila - raw salad/raw dessert- take your pick!

Lunch today - a riot of colours.
Bell peppers - red & green; zucchini- green & yellow; broccoli; beetroot & mushrooms sautéed in balsamic reduction on a bed of iceberg lettuce & topped with arugula and cooked barley.
Nutritious, whole food plant based, phytonutrient rich, anti-oxidant dense foods.

While this is very relevant, most people don’t understand that healthy foods with diversity means fibre dense foods like fruits, vegetables, whole grains, legumes & beans etc; less sugar laden foods means avoid refined & ultra processed foods; less saturated fats means avoid or reduce animal foods and palm oil etc.
Eating a whole food plant-forward or plant - predominant diet high in fibre, high on phytonutrients and low in fat and unnecessary calories can help in prevention of diabetes even if you are genetically pre-disposed.
There is enough and more evidence of putting type 2 diabetes into remission using lifestyle modifications.
Start with 1 step at a time, 1 meal at a time, 1 day at a time.
As a nutritionist & holistic health coach, I have worked with clients who have been able to not become diabetic from their pre-diabetes stage; who have put their diabetes in remission before they could get on medications and who have been able to reduce their medications under a doctor’s guidance as their blood glucose levels were coming down.
