Traditional dishes from Tamil Nadu and Kerala. other regions too as I love to try out various recipes.
Instant wheat rava idli with NO DAL SAMBHAR
TO MAKE THIS
Yellow pumpkin 1 cup ( peel, cook it and mash it)
Vegetable any of your choice.
Tamarind 1 medium lemon size ( soak in water and squeeze the juice)
Sambhar powder - 2 tablespoon ( increase or decrease)
Turmeric powder 1 tsp
Oil 2 tablespoon
Salt
Water as required
TO TEMPER
Oil 1 tablespoon
Mustard seeds
Curry leaves
Asafoetida little
One or two dry red chillies
Coriander Leaves finely chopped for garnish
METHOD
In a heavy bottom pan add one tablespoon oil
Once heats up add the veggies. Sauté well
Add the tamarind extract and turmeric powder.
Let it boil till the raw smell goes OR till the veggies are cooked
Add sambhar powder and salt.
Finally add the cooked and mashed yellow pumpkin.
Adjust the consistency.
Boil it for few minutes.
Switch off.
Give tempering.
Garnish with coriander leaves on top..
Serve with your idli/dosa etc……..
NOTE.. IF YOU WANT YOU CAN ADD COCONUT MILK INSTEAD OF WATER TOO…
YOU CAN REDUCE TAMARIND WATER AND ADD CHOPPED TOMATOES WITH VEGGIES
