Story of a "pasta omelette"

Last summer I was on a food tour with nice Scottish Couple in Naples, after a good evening of tastings we had few chats and we shared some recipes. Surprisingly, today after long time they sends me this photo of the "pasta omelette" that they finally managed to do well:
