Hey There Shellfish Lovers! The photo this week: a partially albino blue crab. This guy also had some strange mottling on his belly. I have never seen one of these before in the years I’ve been crabbing but apparently one wanders into the traps once or twice a year. When they shed, the new shells are the same as the old ones. I threw him back overboard to live on – another marvel of Mother Nature.
This is the last harvest until September. I have run through most of the clams the storm left me (and I am grateful to have had any left to me at all considering); I am holding some back so I have large clams in the fall for you all.

JUNE MARKET, DELIVERY:
• Saturday 6.1 DELIVERIES AND 441 Farmers’ Market 8:30 AM – 12 PM (Friday delivery or meet-up at Working Food is possible if Saturday is out of the question – since I would rather not lose your business – but will make clam dip Friday after harvest so will have minimal time.)

SPECIALTY PRODUCTS:
Clam Dip: $12
My clams – freshly harvested, steamed open and chopped – hand-blended into cream cheese with chopped sweet onion from Promised Land Farm in Alachua; their own clam juice; Marjorie’s Red-bristled Fiend hot sauce; fresh squeezed lemon juice; Worcestershire sauce. 8 oz deli container. A refrigerated product, best when eaten within 3 days.

Marjorie’s Red-bristled Fiend: $12
A variation of a good friend's North Mississippi Hill Country hot sauce, inspired by Marjorie Rawlings and her Cross Creek story of the red pig who ate her fluffy ruffle petunias for the last time. Sassy, slightly sweet and bright. Ground fresh chili peppers from Promised Land Farm, vinegar, Straughn’s honey, bourbon, fresh garlic, dried pineapple, dried mango, salt, mustard powder, ginger powder. 8 oz jar. A refrigerated product.

MERCENARIA MERCENARIA, NORTHERN HARD CLAM:
TOPNECKS: Jones Rack area, mixed sizes (≥1 1/4”): order by 20 count. $18/20 clams (with a couple extry of course).
MIDDLENECKS: Jones Rack area, mixed sizes (1 1/8” – 1 1/4"): order by 25 count. $20/25 clams (with a couple extry of course).
LITTLENECKS: Jones Rack area, mixed sizes (7/8” – 1 1/8”): order by 25 count. $10/25 clams (with a couple extry of course). Examples: Order 25 clams = $10; Order 50 clams = $20
PASTA: Jones Rack area, mixed sizes (≤7/8”): order by 50 count. $10/50 clams (with a couple extry of course).
*Note: If you would like to consume your clams raw please let me know and I will use the same time/temperature controls as the oysters.

Oystercatcher Shellfish is a product of my love of the water and the natural world, and my being blessed with generous friends and mentors who are also excellent captains of shrimp, clam, crab, and mullet-fever boats. As we say, "We sure have the best office," and Mother Nature never ceases to deliver moments of wonder, beauty, and power. I can't even begin to tell you all the amazing things I have seen, or all the adventures I have had. She is also an excellent teacher, and asks us to confront ourselves and especially our shortcomings. Working on the water makes me a better person, and offers me a sense of contentment and accomplishment that nothing else has. I like that I am contributing to oyster bar restoration because I grow a natural oyster that spawns - that increases the number of baby oysters swimming around out there looking for a home. I also return my shell - and customer shell if they bring it to me - to the sea, which creates all kinds of homes for all kinds of creatures, not just baby oysters looking to set.
Oystercatcher is a new venture for me and it is small-scale; I am dedicated to doing it as sustainably as possible.
