Recipe

Ingredients:

300g lamb shoulder or leg, thinly sliced
250g wheat noodles (fresh or dried)
2 tbsp vegetable oil
3 cloves garlic, minced
1 tbsp fresh ginger, minced
1 tsp Sichuan peppercorns (optional)
1 tbsp ground cumin
1 tsp chili flakes
2 tbsp soy sauce
1 tbsp dark soy sauce
1 tbsp oyster sauce
1/2 tsp sugar
1/2 onion, sliced
1 bell pepper, sliced
1 cup bean sprouts
2 green onions, chopped
1 tbsp chili oil (plus extra for serving)
Fresh coriander for garnish
