Nigerian Beef Samosa Recipe

Dough

Ingredients

3 cups (375 g) all-purpose flour

½ teaspoon salt

4 tablespoons (60 g) butter or margarine

¾–1 cup (180–240 ml) water

Filling

Ingredients

300 g minced beef

1 medium onion, finely chopped

1 large carrot, diced

½ cup green peas

2 cloves garlic, minced

1 teaspoon grated ginger

1 teaspoon curry powder

½ teaspoon thyme

½ teaspoon black pepper

1 seasoning cube

Salt to taste

2 tablespoons vegetable oil

Flour Paste (for sealing)

2 tablespoons flour

3 tablespoons water

For Frying

Vegetable oil

Method

1. Mix flour and salt. Rub in the butter until crumbly.

2. Gradually add water and knead into a smooth dough. Cover and rest for 30 minutes.

3. Heat oil in a pan. Sauté onion, garlic, and ginger until fragrant.

4. Add minced beef and cook until browned.

5. Stir in carrots, peas, curry, thyme, black pepper, seasoning cube, and salt. Cook until the vegetables are tender and the mixture is dry. Allow to cool.

6. Divide the dough into small balls and roll each into a thin circle.

7. Cut each circle in half.

8. Fold each half into a cone and seal the edge with the flour paste.

9. Fill each cone with about 1 tablespoon of the beef mixture.

10. Seal the top firmly with the flour paste.

11. Heat oil over medium heat (about 170–175°C).

12. Fry the samosas in batches for 5–7 minutes until golden brown and crispy.

13. Drain on paper towels and serve hot with ketchup, chili sauce, or pepper sauce.

Yield: 20–24 medium Nigerian samosas.
