This one brings real roadside soul to the table.
Went with classic minced lamb, boiled in garlic water for that deep base flavor. Then cooked it down in a homemade tomato purée with fresh ginger, garlic, mustard oil, and a solid lineup of Punjabi spices — turmeric, coriander powder, black pepper, salt, and garam masala. No fuss, no shortcuts.
Once the masala was clinging to the meat, I folded in green chilies, fresh coriander, sweet red bell peppers, and something a little unexpected — creamy Turkish white cheese.
Simmered just enough for the flavors to come together and settle into each other perfectly.
Plated it with:
🥯 Butter-brushed, toasted full corn Greek bread
🥗 Couscous salad with onion & cucumber
🥑 Ripe avocado for that cool, buttery contrast
