Creamy Polenta mushroom and tomato stew & king oyster mushrooms 💛🌱 (Mămăliga cu tocănița de ciuperci și roșii cu ciuperci king oyster)
Recipe in 🇷🇴/🇬🇧
-50g polenta/ 50g mălai
-1 spoon cashew cream/ o lingura crema de caju
-250 ml water / 250 ml apa
-salt /sare
✨bring the water to a boil and stir in salt and the polenta, continue stirring and cook for 3-4 minutes until it’s ready ( also stir in some cashew cream to make the polenta more creamy)

✨când fierbe apa adăugați mălaiul si sarea , amestecați timp de 3-4 minute pana când mămăliga este gata ( poti adauga si crema de caju pentru o mămăliga mai cremoasă )
-one onion/ o ceapă
-2-3 garlic cloves/ 2-3 căței de usturoi
-5-6 cherry tomatoes/ 5-6 buc de roșii cherry
-shimeji & oyster mushrooms (a handful)
-1 tsp olive oil/ 1 lingurita de ulei de masline
-salt, pepper, fresh thyme / sare, piper, cimbru proaspat
✨sauté the onion, garlic in olive oil, add the mushrooms and cherry tomatoes, cook on low heat for 10-15 minutes , add the salt, pepper and thyme and serve on top of the polenta

✨călește ceapa și usturoiul in ulei de masline, adauga ciupercile și roșiile cherry, gătește la foc mic pentru 10-15 minute și adauga sare, piper și cimbru proaspăt; apoi servește deasupra la mămăligă

Lebanese Baba Ganoush🌱🌼🍆
Ingredients:
•two eggplants
•two spoons tahini
•lemon juice (from one lemon)
•two garlic cloves
•salt
•olive oil
Method:
Roast the whole eggplant in the oven or on the stove top until it’s charred on the outside
When the eggplant has cooled down, cut the top off and peel of the skin
Add the eggplant into a food processor and pulse a few times (alternatively you can also chop it )
In the blender add the garlic, tahini, olive oil, salt and lemon juice, pulse a few times until the ingredients are incorporated
🌱I topped it with pomegranate seeds, pine nuts, chickpeas, parsley and olive oil
