VEGAN ROASTED PASTA
Ingredients:
Red bell pepper, roughly chopped- 1-2
Garlic, peeled whole - 3-4 pods
Pearl onions, peeled & sliced - 4 -5
Fresh basil leaves - handful
Cherry tomatoes, cut into HALVES - 4-5
Fusilli pasta (any gluten free pasta is preferred)
Cashews, soaked overnight -5-7 pcs
Salt to taste
Black pepper - 1/4 tsp
Instructions:
Preheat an oven to 350 degrees F. Add all the veggies, including the basil leaves to a baking tray and roast for 15 minutes. Cook the pasta in salted water per packet instructions. Remove the tray from the oven. Let the roasted veggies cool down to room temperature. Transfer them into a blender. Drain the cashews and add them to the blender. Add salt and pepper. Blend until smooth. Transfer into a bowl. Add boiled pasta to the sauce and mix well. Top with extra basil leaves and chili flakes (optional). Enjoy hot!
