It’s American Cheese Month and I’d be remiss to not mention one of my favorites, multi-award-winning, soft-ripened goat cheese Humboldt Fog.
Depending on the stage of ripeness she can be thick and paste-like, similar to a standard goat cheese we all know and love OR have an ooey-gooey, melty creamline.
I think people get too precious with cheese pairings and are afraid to make a “mistake”, there’s no wrong answer here, just what tastes good and what doesn’t.
But, if you need hints try it on a slice of Granny Smith apple with a drizzle of honey, a walnut, and maybe a sprinkle of bee pollen and smoked salt.
I’ll be posting more cheeses & makers all month!
