time for my fave holiday smoothie!!!

shredded chicken tacos tonight. here’s a great example of how i make the same meal work for everyone’s likes/dislikes or dietary specifications.
shredded chicken tacos:
3 chicken breasts
1 medium jar of salsa of choice (we use a healthier option/mild)
1/2 chopped onion
taco seasoning (make your own or choose a healthier option (add in garlic or other seasoning of choice)
slow cook in crockpot for 3-4 hours
pull the chicken out and shred (i use 2 forks—it’s super tender)
15-30 minutes before serving, throw in your veggies—corn, black beans, carrots, zucchini, yellow squash, arugula, cauliflower rice, etc. we like our veggies crunchy and not mushy so i don’t cook very long.
serve on tortilla of choice and too with shredded lettuce, sour cream or plain yogurt, cheese, avocado, salsa.
tip #1: i put this on lettuce and top with avocado and salsa when i’m doing a detox or cutting carbs. still tastes great and i don’t feel like i’m missing out!
tip #2: i take leftovers and freeze them or make them into taco soup (or both). get creative! enjoy!

super easy lentil soup recipe to get the year started off right!
-
-brown lean ground beef with onions and celery in saucepan
-find a healthy lentil soup (i like Amy’s organic one & also Trader Joe’s brand) depending on how many I’m feeding or if I want left-overs: 1-2 cans or containers.
-pour into saucepan with celery, onion and beef. add garlic, salt, lemon pepper and other seasonings you love
-add organic beef or bone broth (I choose low sodium options as well) 1-2 cups depending on how many serving
-throw in chopped can of diced tomatoes, carrots, fresh spinach, green beans, zucchini (veggies you have on hand). heat up!
-if not cutting out dairy, you can top with cheese & dollop of sour cream.
Tips: I often have pre-cut veggies in my fridge for fast meals. you can pre-cook your own lentils for a less-expensive route and add more broth to soup if you do. I often add veggies at end so they are crunchy and not mushy).
I will add a ton more veggies and broth so we can have left-overs for lunch or dinner the next day 🙂
You can also freeze the left-overs for another east meal when needed.
