🍓🫐🍒We see you eyeing those berries from Ellis Farm...and we have a simple, delectable use for them. Vegan and gluten-free, this fresh mixed berry crumble will be gone as soon as it hits the dessert table.
RECIPE // Mixed Berry Crumble (vegan, gluten-free)
Filling: 7 cups mixed berries (raspberries, strawberries, blueberries, pitted cherries) · 4tbsp maple syrup · 2tbsp corn starch · 2tbsp lemon juice // Crumble: 1 cup almond flour · 3/4 cup rolled oats · 1 cup chopped pecans · 1/4 cup brown sugar · 1/2tsp salt · 4tbsp coconut oil
Preheat oven to 350°F. Combine berries, maple syrup, cornstarch, lemon juice in a 13x9” baking dish (or similar size) and mix. In a separate bowl, combine almond flour, oats, sugar, nuts, salt until well-mixed. Add coconut oil and use hands to toss and mix together until a crumbly texture forms. Sprinkle crumble atop fruit evenly. Bake uncovered for ~40-50mins or until juice bubbles and crust is golden brown. Enjoy!
