These are vanilla bourbon macarons and truffles, coconut marshmallows, a rainbow marshmallow rice-cereal bar, chocolate espresso truffles and macarons, raspberry pomegranate truffles, and Swiss almond merengue macarons.

You’re invited to our next dinner: The Fermented Menu!

For this one, we’re showcasing local pork belly fermented with koji, among several other courses featuring the best local produce of the season. Koji, a fungus popular in Japan and made famous by two-Michelin starred Noma, gives meat tenderness and umami typically found only from dry-aging.

Tickets cover a butcher shop tour, a custom cocktail, two wine pairings and four courses for $85.

I’m partnering with Local Foods, a grocer and distributor here in Chicago. Some of you may know Local Foods as home to Butcher & Larder. Everything is seasonal and local. It’s like going to a farmer’s marker 12 months out of the year. And, Butcher & Larder is the end-all-be-all of Chicago butcher shops, IMHO.
