Mondays are quiet around here. The work doesn’t stop, the smokers still needed loaded for tomorrow’s service but it’s the one day that the crew gets to breathe and take it easy in the AC at home. We want to take the day off to thank our staff who spent the holiday feeding fires, hauling meat, and sweating through such scorching weather.
Next time you stop by, remember there’s a lot more behind that box of smoke and sauce. Tell whoever is on the pit you appreciate their dedication!

Good ribs don’t need sauce. But they sure don’t mind it. Let’s debate, WET vs DRY.
Our dry ribs let the smoke, bark, and pork do all the talking, finished with another shake of our secret dry rub made by North Market Spices, Ltd..
Our wet ribs get tossed in sauce that clings to every bite, adding a sweet, tangy layer without covering up the meat.
