I do not use oil on Nut and seed day .... utilizing the oil from the nuts and seeds that day. This carpaccio was served with blanched green beans.
YELLOW SQUASH CARPACCIO
Slice yellow squash with mandolin.
Marinate squash for 30 minutes in:
1/2 Cup lemon juice
1 Tablespoon Dijon Mustard
6-8 Tablespoons Water
1-2 Garlic Cloves Pressed
Pinch Salt/Pepper
Combine......
Server the marinated squash on a platter with olives, sprigs of parsley , strips of sun dried tomatoes and walnut pieces.
Drizzle walnut dressing on top.
Dressing:
Blend 1/4 Cup Marinade with 1/4 cup of walnuts. Add water to thin out.

🟢⚪️Mock Tuna Salad is a Summer Favorite 🟢⚪️
This clean and nutritious salad can be made with various ingredients…..interchanging Garbanzos, Broccoli or Nuts & Seeds are my favorites. A popular dish I made once a week at the world- famous cleansing institute Hippocrates .
Mock Tuna Salad
1 cup sunflower seeds (soak for 6 hrs. , rinse and drain)
1 cup almonds (soak 24hrs, change water twice a day, rinse and drain)
2 + Tablespoons lemon juice
1-2 tablespoons water if needed
1/2 cup celery finely chopped
1/2 cup spring onion chopped
1/4 cup red bell or cherry tomato .. optional
1/2 cup coriander or parsley chopped fresh - loose pack
1/4 cup dill chopped fresh
1/4 teaspoon garlic powder
1/4 teaspoon chili flakes or cayenne
2 teaspoons dulse flakes
celtic sea salt and pepper to taste
Process soaked nuts & seeds in food processor with “S” blade first then add rema ingredients & pulse to mix well until desired consistency. Add more lemon or Dulse if needed.
Serve on lettuce leaves or greens.
