I was just interviewed and the word authentic appeared.

People throw the word "authentic" around constantly when talking about restaurants. I've been guilty of it a wee bit myself. But most of the time, what they actually mean is *accurate* — does the food taste like the place it claims to come from?

That's not authenticity. That's research.

Real authenticity is closer to what the French film Jean de Florette was about. Not a man trying to replicate Provence — a man *being* Provence. True to his history, his people, his particular way of seeing the world. You can feel that in a restaurant too. Not because a chef flew to Oaxaca and watched someone make mole — but because the food tells you who they actually are.

A bowl of beans from someone's grandmother's kitchen. A sauce built from memory, not a culinary school notebook. That kind of truth doesn't require a passport. It just requires knowing yourself.

Dallas has a handful of places that get there. Not many. But when you find one, you know it immediately. It doesn't feel like a restaurant. It feels like a conversation.
