Let’s make some chocolate chip cookie dough 😋. You’re gonna wanna save this one…✌🏻❤️🎯

I was craving somethin sweet, peanut buttery, chocolatey… but still on the keto trail. So I whipped up this Peanut Butter Protein Cookie Dough Bark/Fudge Thing and let me just say… it will not last long in this house 😜.

No baking. 5 minutes to mix. Freeze it. Break it. Try not to eat the whole pan.

Peanut Butter Cookie Dough

Ingredients (brands are optional)

• 1 cup peanut butter….dont come at me about the brand. It’s what I had on hand 😆.
• ¼ cup sugar-free syrup
• ½ cup protein powder - Organised Nutrition
• 2 tbsp collagen powder Perfect Keto
• ½ cup sugar free chocolate chips Lily's Sweets
• pinch flaky sea salt (optional but highly recommended)

Instructions

1️⃣ Warm peanut butter about 10–15 seconds so it stirs easily.
2️⃣ Mix in sugar-free syrup until smooth.
3️⃣ Stir in protein powder + collagen until it becomes thick like cookie dough.
4️⃣ Fold in sugar free chocolate chips.
5️⃣ Spread into an 8” pan lined with parchment.
6️⃣ Sprinkle a little flaky salt on top.
7️⃣ Freeze over night then break into bark pieces or for just 30 minutes and cut like fudge.

Macros (approx if cut into 8 pieces)
Calories: ~180
Protein: ~11g
Fat: ~12g
Net Carbs: ~1–2g

Want it even lower carb?
• Use natural peanut butter with no added sugar
• Add 1 tbsp coconut flour (adds fiber + helps it set)
• Use dark or stevia-sweetened chocolate chips
• Swap half the peanut butter for almond butter

Honestly this is one of those “keep it in the fridge’ and grab a piece when the sweet tooth hits” recipes.

I see you over there… skipping pieces of your own life. Sitting in the cheap seats, worried what people might think.

Sidebar: they’re not thinking about you. They’re worried about their own arm in the photo, their hair, their outfit 😜. And while they’re doing that… you’re missing your life.

So stop telling yourself that tired old story that you can’t do this.

Time to whip up some good old-fashioned pimento cheese, y’all. Just in time for holidays dippin…✌🏻🎯❤️🧀

I was reminded over Thanksgiving how much I used to make this during my militant keto days… it was one of my absolute faves. So guess what? It’s officially back in rotation. 🔥

And listen… don’t come at me about the processed cheese or the mayo. You can use any fancy cheese your heart desires, grate it yourself, make your own mayo, add artisanal unicorn dust …do what makes you happy. 😜

This is just the basic template, so create away!! Tag me with your variations and let me know your favorite way to serve it. My fave “vehicles” are celery, chips, or Korean Sweet & Spicy.

Here’s the mix:

Pimento Cheese

• 16 oz sharp cheddar
• 1 block cream cheese, room temp
• 8 oz jar diced pimentos, drained (put a little juice aside to kick up the taste)
• 1 cup mayo
• 1 tsp garlic salt
• 1 tsp paprika

• Optional: jalapeños 🔥 if you like a little kick, red pepper flakes, extra juice from the pimentos (use sparingly, a little goes a long way 😜).

Now for the magic: dump it ALL in a bowl and whip it until it’s creamy, dreamy, and dangerously good. Taste and adjust, and try not to eat half of it standing at the counter…which is totally what I did.
