Friday Eve Cocktail Hour
SPRING BLUE MOJITO
The Spring Blue Mojito is an unusual twist on the classic mojito, which is made with rum, sugar, mint, and lime. Adding blueberries, cream of coconut, and blue curacao give it a gorgeous color and great tropical taste.
4 blueberries
half a lime, cut into wedges
6 fresh mint leaves5 oz cream of coconut
2 oz light rum5 oz blue curacao
3 oz club soda
Garnish with an extra sprig of mint and few more blueberries
In the bottom of a shaker, muddle 4 blueberries, the lime wedges, and fresh mint leaves. Smash 'em up real good. Then add the 1/2 oz of cream of coconut and continue to muddle until juicy and fragrant. Add rum and blue curacao and fill with ice. Shake vigorously to combine and chill everything well.
Strain into a tall glass, filled 3/4 full with ice. Top with club soda and give it a gentle stir. Garnish with more mint and blueberries. You could also garnish with a slice of lime.

Valentine's Edition
FRENCH KISS
Are you ready for Valentine's Day? Try this easy (and potent!) one for a romantic bubbly beverage.
1 oz gin5 oz Chambord or Raspberry Liqueur
4 oz Champagne or Prosecco
fresh raspberries to garnish
Put your champagne flute in the freezer. Fill a cocktail shaker with ice and add the gin and liqueur. Shake well. You want this to be as chilled as the champagne. Strain into your chilled champagne glass and top with bubbly. Garnish with a pick of raspberries or float some in there.
Note: the combination of gin, liqueur, and champagne is strong!

Friday Eve Cocktail Hour
SALTED CARAMEL MARTINI
The name says it all, a salted caramel dessert in a glass and it's absolutely decadent and delicious.
1 oz Ghiradelli caramel sauce
1.5 oz vanilla vodka
2 oz Irish cream liqueur
extra caramel sauce for the rim
coarse kosher salt
soft caramel candy for garnish
Roll the rim of the glass in a shallow dish or plate of caramel sauce. It helps if the glass is cold. Then roll the rim of the glass in a dish of kosher salt, coating lightly all the way around.
This rim really makes the drink!
In a cocktail shaker filled with ice, pour in the 1 oz caramel sauce, vodka, and Irish cream. Shake for at least 30 seconds, or longer if you can. Strain into prepared glass and garnish with a caramel candy.
Serve and enjoy.
