On this week’s episode of cooking for friends - I made some Bistek Cheesesteaks + Sinigang seasoned fries.

Bistek tagalog was always one of my favorite dishes that Lola made. When going to Lola’s for dinner, she always made bistek cause she knew it was my favorite. She’d splurge and use ribeye cause she was making it for special guests, at least that’s what she told my mom. Lol.

I love it over rice with all the sautéed onions, but I love it just as much in sandwich form. Same delicious sautéed onions + tender ribeye soaking in the soy sauce + calamansi marinade all in a cozy provolone blanket. As would say, this meal smacked!

After two years in hiding, my calamansi pie is making a comeback. 🥳

Haven’t had the chance to try this pie? You’re in for a treat! If you’re not familiar with calamansi, it is a citrus native to the Philippines. Flavor-wise, you can think of it like a hybrid between a lime and a tangerine. I like to say it’s similar to a kumquat, but more tart.

The tartness of the filling is balanced out with my graham cracker coconut crust and topped with a coconut whipped cream. 🤤
