Google is starting to rely more and more on machine learning/AI to render the best search results. Its a bit ironic. They are basically using artificial intelligence to achieve their real goal...to have the algorithm act like a human in selecting the best results for a query.

This article does a great job in explaining Google's Core Web Vitals. It's a bit techy, but you can get where Google is going on measuring the quality of users' experiences with websites and how to use that in its ranking algorithm.

Lab data has default values for these and, (except in the case of Page Speed Insights), can be calibrated by developers to simulate all manner of conditions.

Google rolls out core updates to its algorithm all the time. If you follow four simple principles, you will avoid the lion's share of pain. 1. Follow the spirit of Google Webmaster Guidelines, not just the law. 2. Use "E-A-T" when building content (Expertise, Authoritativeness, Trustworthiness). 3. Build relationships with other sites that have the audience you desire. 4. Have a fast, website with great usability.
