I made awesome Greek chicken pita sandwiches
Marinate chicken breast cut into small pieces in 1/2 cup Greek yogurt I use 2%. Add juice of 1large lemon teaspoon of good quality fresh dried oregano 3 chopped cloves of garlic and 1/2 cup evoo and 1tsp kosher salt and pepper each I put everything in large ziploc bag and put in fridge overnight or at least 1 hour before grilling.
Have 2 sliced tomatoes and thin sliced red onion with whatever lettuce you like shredded.
When marinating chick mad your tsdieki sauce.
One sliced cucumber one cup plain Greek yogurt . Juice of 1/2 lemon tsp kosher salt and 2 cloves grated garlic and 2tbs of chopped red onion. Cover and put in fridge until ready to serve. This sound complicated but its just a few steps and delicious.
When ready to cook chicken take out of fridge and heat olive oil in grill pan or bbq. Grill chicken.
Have your pita with little olive oil and salt warmed up. Add chicken lettuce tomato onion. Drizzle with tsdiki sauce and enjoy.
