These spiced blondies are everything you want in a holiday bake! Soft, chewy, and filled with warm cinnamon and nutmeg.

Loaded with chocolate chips, shredded coconut, and California raisins. Then finished with a dark + white chocolate drizzle… they’re the perfect balance of sweetness and texture.

California Raisins were the perfect addition since they are naturally sweet with no added sugar, high in potassium, and totally heart-healthy.

Just 1/4 cup = a full serving of fruit plus 7% DV fiber, 6% potassium, and 4% iron.

Ingredients

¾ cup unsalted butter, melted
1 cup brown sugar (light or dark works)
½ cup granulated sugar
1 tbsp vanilla extract
2 large eggs, at room temperature
2 ¼ cups all-purpose flour
1 ½ tsp baking powder
¼ tsp salt
¼ tsp cinnamon
¼ tsp nutmeg
¼ cup shredded coconut
½ cup chocolate chips (semi-sweet or milk)
½ cup of California Raisins

Method

Preheat oven to 350°F (175°C).
In a large bowl, whisk together melted butter, brown sugar, granulated sugar, vanilla, and eggs until smooth.
Add flour, baking powder, salt, cinnamon, and nutmeg. Stir until just combined.
Fold in shredded coconut, chocolate chips, and raisins.
Spread batter evenly into the prepared 8x8 pan.
Bake for 18–20 minutes, or until the edges are set and the center is just slightly soft.
Allow the blondies to cool completely in the pan before removing and slicing.

Ingredients

1 ½ cups all-purpose flour
¼ cup sugar
1 tsp baking powder
¼ tsp baking soda
¼ tsp salt
½ cup cold butter, thinly sliced
½ cup California raisins
½ cup plain Greek yogurt
Zest of 1 lime
Zest of 1 lemon

Directions

Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.

Add the cold, sliced butter to the flour mixture. Using your fingertips or a pastry cutter, work it in until the mixture resembles coarse crumbs.

Stir in the California raisins, lime zest, and lemon zest.

Gently fold in the Greek yogurt until a soft dough forms. Do not overmix.

Transfer dough to a floured surface. Pat into a 1-inch thick circle and cut into 8 wedges.

Place scones on the baking sheet and bake for about 15 minutes, or until the edges are golden.

Let cool slightly before serving. Enjoy warm or at room temperature.

This California Raisin Salted Caramel Latte is naturally sweet, silky, and the perfect bridge between summer afternoons and crisp autumn mornings.

California Raisin Salted Caramel
1 cup soaked California Raisins
¼ cup coconut cream
1 tbsp vanilla extract
A generous pinch of salt

Method
Soak raisins in hot water until plump.
Blend into a smooth paste.
Strain through a fine mesh sieve to remove any bits.
Simmer the raisin purée until it reduces and thickens.
Stir in coconut cream, vanilla, and salt until glossy.
Spoon it over ice, pour in milk and coffee, and sip your way into fall
