“Hear me out here. That 1st girl was miserable, tried, hopeless that she would never feel better & lose weight. She had a family history of disease & was considered clinically "obese", a word I couldn't wrap my head around but I wasn't doing anything about it! I had no way of knowing I would be a better version with a much more positive outlook toward a healthy future.
Losing the 70 lbs was a dream come true after yo-yoing for years. I needed the structure, the simplicity, the accountability, the community, the guidance. I needed to feel like me again.
I've learned so much since saying yes to health. It's totally OK to love me again because I had lost me for a while. This is true transformation!
So today if you are feeling hopeless let me remind you that today is not an indicator of your future. I didn't even know it was possible to be where I'm at today. 🌿 𝐇𝐞𝐚𝐥𝐭𝐡𝐲 𝐙𝐮𝐜𝐜𝐡𝐢𝐧𝐢 𝐂𝐫𝐮𝐬𝐭 𝐂𝐡𝐞𝐞𝐬𝐞 𝐏𝐢𝐳𝐳𝐚 🍕
Pizza is always a favorite in our house and over the years I’ve learned to make different options of healthy crust. Cauliflower and chicken crust being our 2 top favs but this one is on another level!!!
𝗧𝗵𝗲 𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀 🌿
𝘾𝙧𝙪𝙨𝙩:
• 1 cup (4 oz) shredded zucchini (2 green)
• 1 oz low fat ricotta (with 2-3 g of fat/oz) (1/8 lean)
• 1 oz light mozzarella (with 3-6 g of fat/oz) (1/4 lean)
• ¼ cup egg beaters (1/8 lean)
• 1/8 tsp garlic powder (1/4 condiment)
• ¼ tsp dried basil (1/4 condiment)
𝙏𝙤𝙥𝙥𝙞𝙣𝙜𝙨:
• 2 oz light 3 cheese blend (3-6 g of fat/oz) (1/2 lean)
• 1/4 cup (2.11 oz) Italian or Rotel diced tomatoes - (less than 5 g of carbs per ½ cup) (1/2 green)
• 1/4 cup (1.59 oz) sliced tomatoes (1/2 green)
• 4-5 leaves fresh basil as garnish (1/4 condiment)
𝗧𝗵𝗲 𝗗𝗶𝗿𝗲𝗰𝘁𝗶𝗼𝗻𝘀 🍕
𝟭. Preheat oven to 425. Purée diced tomatoes (if desired) in a small chopper for a few seconds. Set aside.
𝟮. Measure 1 cup of raw zucchini. Add the ¼ cup egg beaters, 1 oz ricotta, 1 oz mozzarella, garlic & basil. Stir together well.
𝟯. Line a pan with parchment paper sprayed lightly with cooking spray. Spread zucchini mixture on parchment paper.
The thinner, the crispier. Bake for 30-40 minutes and then flip. Put back in the oven and bake for another 10-20 minutes.
𝟰. Add tomato sauce, sliced tomatoes, and cheese on top. Broil until cheese is melted, about 5-10 minutes.
Makes 1 serving | Per Serving :
• 1 Lean
• 3 Greens
• 3/4 Condiments
(I like to quadruple)

A healthy journey continues, it doesn't start over.
A diet has a beginning and an end.
But when you are seeking to truly regain your health and get off the dieting hamster wheel there is no start over.
