Chicken Relleno on cauli-rice with honey chipotle carrots.
Chicken Relleno:
2 chicken breasts
1/4 c chopped onion
1/4 c chopped red bell pepper
1/4 c chopped poblano pepper
2 slices pepper jack cheese
Salt & pepper to taste
Coconut oil
Rinse and pat dry chicken. Salt and pepper each side. Heat medium skillet on medium heat with just enough oil to coat the bottom of the pan. Place chicken in hot pan pretty side down. Cook for 3 minutes then flip and cook for 3 more minutes. Remove chicken to small baking dish. Use same pan to sauté onions and peppers until tender. Add oil if needed.Top chicken with mixture and bake at 350⁰ for 20-30 minutes until done. Cover chicken with cheese and bake at 450⁰ for 10 minutes. Serve over rice - cauli-rice, brown rice or jasmine rice.
Honey Chipotle Carrots
1 pound sliced carrots, thick cut
1/4-1/2 t smokey chipotle powder
1 T butter
1 T honey
Salt & pepper to taste
Coconut oil
Water as needed
Heat medium skillet (you can use the same pan again) on medium heat with just enough oil to coat the bottom of the pan. Place carrots into pan and sprinkled with chipotle powder. Cook approximately 10 minutes until the start to soften. Add a tablespoon or two of water if carrots start to stick. When they reach desired softness, add butter until melted then add honey. Glaze should start to form as any excess water cooks away. Salt and pepper to taste.
