Taco stuffed shells are the most popular item I’ve ever put on the Meal Menu- and they freeze well! Imagine everything you love about tacos, but it’s inside of a pasta shell! Ground beef, corn, peppers, and my own taco seasoning blend topped with taco sauce and shredded cheese. Just heat in the oven, top with sour cream or guacamole, and enjoy! They’re a labor of love- but oh so worth it!

I love this versatile and delicious protein! It’s filling on its own, but even better on a salad, sandwich, nachos, baked potato, or veggies! I use my own homemade Buffalo sauce mixed with chicken breast for a slightly spicy and warm kick!

Hi everyone 👋
You might be wondering where I have been and why there hasn’t been a Meal Menu lately…

When I’m not cooking, you can find me working at BCSC’s developmental preschool as a behavioral instructional assistant. This is my fifth year working with the 💜best💜 3-5 year olds you can imagine. I have also spent the last five years being heavily involved and on the board of Brown Elementary Schools PSG (like a PTA). What I’m saying is- I’m a fan of Brownsburg Public Schools. All public schools, really.

And a large part of the reason why is simple:
Sara Wuellner.
I knew we would be friends at our first encounter. I knew I wanted to be as helpful and supportive in our elementary school as she was. To know Sara is to know joy personified. She loved her family fiercely. A champion for public education. A thoughtful and considerate beacon of light, working tirelessly behind the scenes to support and love as many staff members at her schools as possible. The many who were in her orbit: we were the lucky ones.

Sara suffered a massive brain aneurism on a Tuesday in March, and she was gone by Thursday. Indeed, we had lost one of the best of us. I have been reeling from this ever since, and it’s been a struggle to find my footing and proceed ‘business as usual’. I have been working on a project to bring a wildflower garden to Brown Elementary School and West Middle School in her honor, while also working on a ‘hallway project’ at my preschool that she was so excited about.

Ive been busy, just not in the kitchen.

I’m getting back to it, though. Look for a Meal Menu today, Saturday April 18th, at noon.

And make it a ‘Sara Day’ 💜🐾

A hearty beef stew is perfect for a cold weeknight! My beef stew combines beef, potatoes, carrots, celery, peas, in a delicious broth with lots of seasonings- including Guinness! (Don’t worry, the alcohol cooks away 😉) Just add some crusty bread or cheddar muffins to the side and dinner is done!
