Mom’s Sourdough Power-dough Oatmeal Cookies
INGREDIENTS
* 3 teaspoons vanilla extract
* 1 cup sourdough discard
* 1 1/2 cups apple sauce
* 3 eggs
* 2 1/2 cups all-purpose flour
* 2 teaspoons cinnamon
* 1 teaspoon nutmeg
* 1 1/2 teaspoons baking soda
* 1 teaspoon salt
* 4 cups quick-cooking oats
* 1 cup packed brown sugar
* 1/2 cup white sugar
* 1/2 cup ground flaxseed
Maple Glaze
* 1 cup powdered sugar
* 1/4 cup maple syrup
* Desired milk as needed for consistency (1 tablespoon almond milk was used)
INSTRUCTIONS
1. Preheat oven to 375 degrees Fahrenheit and prepare a casserole dish with parchment paper.
2. In a bowl, combine all dry ingredients and mix. Next, add wet ingredients and mix until combined.
3. Transfer dough into the prepared casserole dish.
4. Cook for approximately 25 minutes. Remove from the oven and allow cookies to cool.
Make the Maple Glaze
* After the cookies have fully cooled, combine powdered sugar, maple syrup, and milk. Whisk until fully combined. If the glaze is too thick, add milk of choice, 1 teaspoon at a time, until it is runny enough to drizzle from a spoon.
* Once combined, use a spoon to lightly drizzle the glaze over the cookies.
