We’ve been working on a bourbon that’s shaping up to be something entirely new. Right now it’s in the tasting stage, and let’s just say… the barrels are bringing some serious character.

Here’s your hint:
These are barrels we previously aged beer in, and maple may be involved ;)

Reservations are already halfway sold out for our upcoming Whiskey Dinner at John Wright Restaurant featuring whiskey and bourbon pairings from Lancaster Craft Distillery.

Distilling takes time, patience, and expertise.

Luckily for us, we have Tim Kreider, our master distiller.

Today starting at 4am, Tim started his run of Hexx Vodka for our ready to drink cocktails. By 12-noon, he had over 300 litres of finished product, and still won't be finished until 4pm.

During this process notes are taken every 15-30 minutes noting the percentage of steam, water flow-rate, pressure, temperature, and proof of the still and distillate.

At the end, we will be ready to make our ready to drink cocktails (and yes, we are currently exploring new flavors and recipes every day!)
