The dehydrator has been running most of the day.
Today it's garlic scapes.
A few weeks from now they'll be ground into powder and stored in jars. Then sometime this winter, when snow is flying outside, I'll open one of those jars and remember exactly where that flavor came from.
That's one of the things I love most about preserving food. It lets me enjoy a little bit of summer all year long.
