White Bean Jar Salad

IngredientsServings: 4

For salad:
1 can (14oz) white beans like cannelini or navy beans rinsed and drained
1 can (14oz) artichoke hearts in brine or water, rinsed, drained and chopped
¼ cup red onion, diced
1 cup tomatoes, diced
2 tbsp fresh herbs like parsley or cilantro, finely chopped
For dressing:
¼ cup olive oil
2 lemons, juiced
2 cloves garlic, finely minced or grated
⅛ tsp salt or more to taste

Let sit at least 30 minutes to allow to marinate well. Enjoy!
