Today we’re taking a simple artichoke and turning it into something truly special.

Fresh artichokes are cleaned, roasted until tender, then filled with a rich Louisiana-inspired mixture of Gulf shrimp, browned andouille sausage, sweet peppers, onions, garlic, and Cajun seasoning.

Finished with a bright micro gremolata, delicate squash blossoms, and dandelion petals for a beautiful garden-to-table presentation.

This dish combines classic Cajun flavors with refined culinary technique, creating a plate that’s both comforting and elegant.
