A quick recap on their story—Jenny & Savio started with a trailer at Midtown after countless applications & some rejections from multiple markets. Most people would’ve stopped. They didn’t. They believed they had a place in the coffee scene—and built it anyway. Their journey started with them partnered with VSAM at the U of M, supported local charities, and even helped raise money for a friend with cancer. Word spread. Soon they were regulars at Mill City Farmers Market (& still are every Saturday).🫱🏻🫲🏼
Feb 17, 2024 → first shop on France📍
March 7, 2026 → second location downtown🌇
And now we’re here.
I took the Green Line over Wednesday morning—
It’s lively. People grabbing coffee before work. Catching up before the day starts. Light rail bells ringing, espresso being pulled, & the Neon Càphin glowing.The shop itself is smaller—but don’t let “express” fool you. It’s not limited, just faster. Online ordering too. Perfect if you’re always on the go.🧳
BUT IF YOU STAY-outlets at every table & there’s even more seating in the lobby. Lots of local art, & you’ve been to Linden Hills—you’ll notice the start of their community/pupper wall again.🐶
Same energy just in a new space✌🏼

FINAL THOUGHTS:
It’s 5-min walk from my office & a quick train from my apartment. I’ve already started dropping in on Wednesdays & Fridays—and it’s becoming part of the routine. Watching this team grow from trailer to this has been unreal & pretty damn motivating. Top-tier coffee, incredible people, & super accessible. Go support them!👍🏼

Huge shoutout to Istanbul & Usrah (staff) and Hikma (regular) for sharing the heart behind the space & culture. Istanbul brings a creative energy to the drink ideas, while Usrah is dialed on ex*****on and balance. Their inspiration comes from art, color, taste, and flavors that remind them of home. They’ve also got an old-school analog community board with frequent events at the event center.🫱🏻🫲🏼
Nomadic is open until 10pm, and once Ramadan begins, they’ll be open even later — past midnight 🌙

🤔FINAL THOUGHTS💭
Walking in last night felt welcoming. Friendly staff, thoughtful recommendations, and people genuinely open to sharing about the culture. Hikma even chimed in while we were chatting and added more context around community and giving back — super appreciated. It’s a calm, cozy space that still feels alive. Solid place to work, hang out, & try something new. Great late night spot for the night owls out there, go support them!👍🏼

This afternoon I had the chance to speak with Stephanie & Peter, the owners of Easy Day!🫱🏻🫲🏼
Imagine Lofi beats playing, whiffs of bagels being toasted, & a cozy wood fireplace keeping things warm in the corner of the shop. Tables were filled, Splatback chairs pulled up for extra seating, a line of customers that was non-stop from 12pm-4pm.🪵🥯
•Grand Opening September 27th, 2025 (soft on 9/22/25)🎉
•Raised over $10,000 for NAMI together through Bike for Psych as one of their first projects together.🚲
With both of them having previous experience in the mental health world, they noticed a lot of parallels & skills that carried over to running Easy Day such as leadership, community building, & most importantly listening. Peter & Stephanie met during the Covid era. After the chemistry & success they had with raising money with NAMI they knew there was something there. “Hey let’s do some crazy stuff together”. Fast forward a few years and they’re 4 months into their very first cafe. They’ve worked & adapted through obstacles, enjoyed & celebrated the wins, & have continued to push each other to not be complacent.💪🏼

FINAL THOUGHTS:
Instantly noticed the tower of boxes of donations for the local community drives, they’re very in tune. It was very busy today, but turnaround time for a drink was one of the fastest around. Lots of traction already & with their backgrounds in mental health, studies in G&F, and focuses in M&A, they definitely have the tools needed to hit their 2 year goals. Recommendations were given, service was pristine, & names were remembered. Easy Day provides unreasonable hospitality, definitely go support them👍🏼
