I had a wonderful time preparing Paula's dried herb-infused rigatoni pasta!
Pasta Dough Recipe:
400 ml (2-1/2) cups Organic White Flour- sifted
208 ml (1 cup) Organic Semolina Flour
207 ml (4 Eggs) Organic Eggs- beaten
105 ml cold Water 1-1/2 tsp Sea Salt
Mix flours and salt together in a large bowl. Beat the four eggs, pour the flour into a KitchenAid mix mixing bowl, and slowly add in the beaten eggs, then the water. Mix until very firm, then put on a cutting board or countertop. Divide dough and knead until dough is glossy. Option: if you would like to add dried herbs like I did, I added 1 tablespoon of dried herbs to the flour mixture. Enjoy!!
