Tonight I made shrimp cauliflower mac and cheese. Used light cream cheese and milk in place of heavy cream. Added some corn starch to thicken up the sauce. Threw in some toasted bread crumbs.

I know,I know. It looks like the inside of a diaper 🤣 but I promise you it does taste like it! I love spinach in my eggs. I blended 2 cups of freshspinach with two cracked eggs and seasoning. Cooked it as scrambled eggs. I got a taste of fresh spinach in every bite.
