Saturday sample highlight: The St Jeanne🧀
This is another invention by Jon Metzig, and is a hidden gem among the Union Star cheeses.
Named after his Grandmother, this is semi soft, made from cow’s milk, and is a washed-rind cheese. This means that it is washed in brevi-bacterium linens, which are bacterium that are essential for ripening the cheese. It has a unique funk that deepens with age, and a distinctively smooth texture.
If you love savoury cheese pairings, then this one is for you. Pair with salty cured meats like salamis, olives, toasted rye bread, pickles, and almonds to bring out its earthy, nutty flavours.
If you like the stinkier cheeses, such as a Brie or a Limburger, this is a good middle ground for you.

Good news, our house-made Camembert is ripening beautifully 🧀🤍
Further to my post a few weeks ago introducing our very own triple-cream Camembert, I’m pleased to report that it is ripening and turning soft and delicious as we speak.
If you look closely you can see the cream-line moving inwards, as the cheese ages.🤩
One way I have been enjoying this cheese is by eating it on a piece of toast with fresh cherries and nectarines. The tart flavour of the cherries and stone fruits cut through the creaminess of the cheese to create a burst of sweet and sour, and make for a spectacular lunch.
It is also absolutely delicious with whipped honey!👀

Friday sample highlight: Hickory Nut Muenster🌰
This is a Wisconsin speciality, if you grew up with Hickory nut trees then you are lucky to know their unique taste, and to know how difficult they are to crack!
Hickory nuts are sweeter than walnuts or pecans, and are locally sourced by friends of Union Star. The sweet, buttery, and slightly smokey taste of the nuts perfectly compliments the smooth, rich flavour of our Muenster cheese, making it a true Wisconsin novelty.
Ideal for snacking on and pairing with apple slices and honey, this is something you won’t find many places. 🌰🍯🧀

Thursday sample: Basil and tomato cheddar 🍅
This cheese is another Union Star classic flavoured cheddar, it blends the sweet tomato notes with the fresh basil, creating a wonderful flavour profile that is rounded by the creaminess of the smooth cheddar.
This cheese is a great melter, and works really well in a grilled cheese (particularly when dipped in a creamy tomato soup). 👀🍅
We used this cheese in our May tasting class series at The Cheese Table for one of our pairings, which was called a ‘Wisconsin Caprese Salad’. This was a cube of cheese with a slice of tomato, fresh basil ribbons, and a drop of balsamic glaze reduction on-top.
Ideal for canapés or grilled cheeses, this basil and tomato cheddar can wear many hats.

Have you ever baked a cheese in the oven until golden? If not, may I suggest that you start with our very own Red Willow!🧀
The Red Willow is a soft, washed-rind cow’s milk cheese, invented by Jon Metzig himself. This beautiful soft cheese is washed in Scotch ale from the Fox River Brewery company, which gives it a delicious savory and ye**ty flavour. Its pale pink color gives it the name Red Willow, where it was developed at Willow Creek Creamery!
While it is delicious on a cracker, or on a charcuterie board, we think that it really shines when you bake it in the oven.
As a garlic lover, I cut up garlic cloves and then ‘stud’ the cheese with it, before putting in the oven at 350 for around ten minutes, until the cheese has melted and the garlic is caramelised.
This makes for the most exquisite baked cheese, perfect for dipping fresh bread in, and pairing with a cured salami.

Today’s sample: Jalapeño Muenster 🌶️
This Union Star classic flavored muenster is a fan favorite, and for good reason.
The Jalapeños are just spicy enough to cut through the creaminess of the muenster, creating a warm and buttery finish.
This cheese is wonderful for snacking on as is, but it also an excellent melter, and is ideal for grating over tacos or enchiladas. It’s the right amount of spice and creaminess, and is truly delicious however you use it.
