🌱 Basil Butter Anelli with Fresh Mozzarella 🌱

Anelli pasta tossed in an easy basil butter sauce topped with fresh mozzarella & Parmigiano!

Ingredients:

- 1/2 lb. anelli pasta
- 2 sticks salted butter, softened
- 1 cup basil, loosely packed
- 1 garlic clove, grated
- Zest of 1 lemon
- 1/3 cup Parmigiano Reggiano, finely grated
- 1/2 cup fresh mozzarella, cubed
- Pasta water as needed
- Salt to taste

Note: This makes more basil butter than you need. Save the extra to use throughout the week!

🍋 Whipped Robiola & Lemon Butter Agnolotti 🍋

Agnolotti filled with whipped robiola & Parmigano and tossed in a lemon butter sauce topped with fresh chives - a spring fave!

Ingredients:

- 1 cup ‘00’ wheat flour
- 1/2 cup semolina flour
- 2 whole eggs
- 2 egg yolks
- 3.5 oz fresh robiola
- 1/3 cup Parmigiano Reggiano, grated
- Zest of 1 lemon
- 1/4 tsp. salt
- 6 tbsp. unsalted butter
- Juice of 1/2 lemon
- 1 tbsp. chives, finely chopped

🌼 Lemon Butter Flower Pasta with Pink Peppercorn 🌼

Found this fun pasta shape from and decided to keep it light and simple with a lemon butter sauce with pink peppercorn, Parmigiano and parsley! 🍋🌼

Ingredients:
- 1/2 lb. flower shaped pasta
- 6 tbsp. butter
- Juice of 1-2 lemons
- 3/4 cup Parmigiano Reggiano, grated
- Pink peppercorn to taste
- 2 tbsp. Italian parsley, finely chopped
- Pasta water as needed
