Zesty Corn Bowl
🛒 Ingredients
- 4 cups corn kernels, fresh, frozen, or canned and drained
- 1 tbsp olive oil
- 1 cup cherry tomatoes, halved
- 1 red bell pepper, diced
- 2 green onions, sliced
- 1 small avocado, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup chopped parsley or cilantro
- 1/3 cup crumbled feta cheese
- 1 small jalapeño, finely chopped, optional
- 2 tbsp lime juice
- 2 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
👩🍳 Directions
Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the corn and cook for a few minutes until warmed through and lightly golden in spots. This gives the salad extra sweetness and flavor without much work.
Transfer the corn to a large bowl and let it cool for a few minutes so the fresh ingredients stay crisp.
Add the cherry tomatoes, red bell pepper, green onions, red onion, avocado, parsley, feta, and jalapeño if using. Toss gently so everything stays fresh and chunky.
Drizzle in the lime juice and olive oil. Sprinkle with salt and black pepper, then toss again just until combined.
Serve right away for the freshest texture, or chill it for a little while if you want it extra refreshing. It is lovely on its own, with grilled chicken, or scooped up with warm flatbread.
