Recently, I heard about a burger place in Southern Maryland that was making wings, fries, chicken sandwiches & more. So I drove down to to find out for myself, especially after I heard someone say the BEST burgers in the DMV!!

Broccoli Cheddar Baked Potato Soup
12oz broccoli florets
1 head garlic
2 tbsp Avocado oil
2 medium carrots, shredded
4 ribs celery diced
1 small white onion, diced
3 cups small diced potatoes
12 oz package panchetta or 4 strips bacon
2 tbsp better than bouillon
2 tbsp butter
1/4 cup flour
4 cups water
2 cups half and half
1 cup heavy cream
4oz white cheddar
1oz Gouda
1oz Parmesan Romano
Salt, pepper and paprika to taste
1. Break down broccoli into smaller pieces and place on a baking sheet. Drizzle with 1 1/2 tbsp oil and season with salt (or desired spices). Add a head of garlic and roast for 25-30 mins, or until desired browning achieved.
2. In large pot over medium heat, add pancetta (or bacon) qnd cook until browned and crispy. Remove from pot and set aside.
3. Add carrots, onions and celery to pot and cook until just softened. Add better than bouillon and roasted garlic, then smash to incorporate. Add butter and allow to melt.
4. Add flour and cook down for 4-5 mins. Slowly add in water, using a whisk if necessary to avoid clumps. Add potatoes and bring to a boil. Reduce heat, cover and cook for 15 mins or until potatoes are softened.
5. Remove lid and add heavy cream, half and half and 3/4 of the cheese blend. Stir to incorporate then taste and adjust for seasonings. I added a little more salt, pepper and paprika.
6. Add in broccoli and stir to combine. Allow to simmer an additional 5 mins then serve.
7. Top with crispy fried onions, pancetta/bacon and remaining cheese. Enjoy!
