Chicken Zucchini Bake
Ingredients
Main
2–3 chicken breasts, cut into bite-sized pieces
2 medium zucchini, sliced into half-moons
1 cup cherry tomatoes, halved
2 tbsp olive oil
3 cloves garlic, minced
1 tsp Italian seasoning
Salt and black pepper, to taste
Cheese Topping
1 cup shredded mozzarella cheese
½ cup grated Parmesan cheese
Optional Add-Ins
½ tsp red pepper flakes (for heat)
Fresh basil or parsley (for garnish)
½ cup sliced mushrooms or bell peppers
Instructions
1. Prepare the Oven
Preheat oven to 400°F (200°C).
Lightly grease a baking dish.
2. Season the Chicken & Vegetables
In a large bowl, combine chicken, zucchini, tomatoes, and garlic.
Add olive oil, Italian seasoning, salt, and pepper.
Toss until evenly coated.
3. Assemble the Bake
Spread mixture evenly into the baking dish.
Sprinkle mozzarella and Parmesan evenly over the top.
4. Bake
Bake for 25–30 minutes, or until chicken is cooked through and vegetables are tender.
Broil for 2–3 minutes at the end for a golden, bubbly cheese topping.

Creamy Sun-Dried Tomato Pasta with Chicken and Mozzarella
Ingredients
Pasta & Chicken
12 oz (340 g) pasta (penne, rigatoni, or fettuccine)
2 chicken breasts, sliced into bite-sized pieces
2 tbsp olive oil
Salt and black pepper, to taste
1 tsp Italian seasoning
½ tsp paprika
Creamy Sauce
3 tbsp butter
4 cloves garlic, minced
½ cup sun-dried tomatoes, chopped (oil-packed preferred)
1 cup heavy cream
½ cup chicken broth
¾ cup grated Parmesan cheese
1 cup shredded mozzarella cheese
½ tsp red pepper flakes (optional)
Garnish
Fresh basil or parsley
Extra Parmesan cheese
Instructions
1. Cook the Pasta
Boil pasta in salted water until al dente.
Reserve ½ cup pasta water, then drain and set aside.
2. Cook the Chicken
Season chicken with salt, pepper, Italian seasoning, and paprika.
Heat olive oil in a large skillet over medium-high heat.
Cook chicken until golden and fully cooked (5–7 minutes).
Remove and set aside.
3. Build the Sauce
In the same skillet, melt butter over medium heat.
Add garlic and sauté for 30 seconds.
Stir in sun-dried tomatoes and cook for 1–2 minutes.
Pour in chicken broth and heavy cream, stirring well.
4. Make It Creamy
Add Parmesan cheese and stir until melted.
Add mozzarella and stir until smooth and slightly stretchy.
Season with red pepper flakes if using.
5. Combine Everything
Add cooked pasta and chicken to the sauce.
Toss well, adding pasta water if needed to loosen sauce.

Ingredients:
- 1 1/2 lb ground beef
- 4 burger buns
- 8 slices cheddar cheese
- 8 slices bacon
- 2 tbsp butter
- 1 tbsp mayonnaise
- 1 tbsp ketchup
- 1 tsp mustard
- 1 tsp Worcestershire sauce

Instructions:

Ingredients:

½ cup breadcrumbs
1 large egg
2 cloves garlic, minced

1 teaspoon soy sauce
½ teaspoon salt
½ teaspoon black pepper

For the Honey Sriracha Glaze:
¼ cup honey
2 tablespoons Sriracha sauce (adjust to taste)
2 tablespoons soy sauce
1 tablespoon rice vinegar
1 teaspoon sesame oil
1 teaspoon cornstarch mixed with 1 tablespoon water (for thickening)
Directions:
Preheat Oven: Set to 400°F (200°C). Line a baking sheet with parchment paper.

Poor Man's Husband Casserole
Ingredients:
1 pound ground beef
Garlic (to taste)
1 teaspoon salt
1 teaspoon sugar
2 cans (8 ounces each) tomato sauce
8 ounces egg noodles
8 ounces sour cream
8 ounces cream cheese
1 ½ cups shredded Cheddar cheese
Instructions:
Preheat oven to 350°F (175°C).
Cook the ground beef in a skillet until browned. Drain excess grease.
Stir in garlic, salt, sugar, and tomato sauce. Cover and let the mixture simmer for 15 minutes.
Cook the egg noodles according to package instructions. Drain and set aside.
In a small bowl, combine sour cream and cream cheese until smooth.
In a casserole dish, layer the ingredients twice in the following order:Cooked egg noodles
Sour cream mixture
Meat sauce
Sprinkle shredded Cheddar cheese evenly over the top.
Bake for 20 minutes or until heated through and the cheese is melted.

*Ingredients – Serves 3-4*
*For the steak bites:*
- 1.5 lbs sirloin or ribeye, cut into 1-inch cubes
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp olive oil
- 4 tbsp butter
- 5 cloves garlic, minced
- 1 tbsp fresh parsley, chopped
*For the chili potatoes:*
- 1 lb baby potatoes, quartered
- 2 tbsp olive oil
- 1 tsp chili powder
- 1 tsp smoked paprika
- ½ tsp garlic powder
- ½ tsp salt
- ¼ tsp cayenne, optional for heat
*Instructions:*
1. *Crisp potatoes*: Preheat oven to 425°F. Toss potatoes with oil, chili powder, paprika, garlic powder, salt, and cayenne. Roast 25-30 minutes, flipping once, until golden and crispy.
2. *Season steak*: Pat steak cubes dry. Season with salt and pepper. Dry = crispy sear.
3. *Sear steak*: Heat olive oil in a skillet on high. Add steak in batches, don’t crowd the pan. Sear 2 minutes per side for medium-rare. Remove and set aside.
4. *Garlic butter*: Lower heat to medium. Add butter and garlic to the same pan. Cook 30 seconds until fragrant. Toss steak bites back in, coat with garlic butter 1 minute.
5. *Serve*: Plate steak bites over chili potatoes. Sprinkle parsley on top.
