Throwback to a meal I’m definitely making again!

Shrimp, spinach and cheese stuffed salmon!🤯

Sautéed the shrimp first, then added spinach since it cooks quickly. Stuffed the salmon with both shrimp and spinach then added cheese last!

Almost 22 miles😅

I was expecting to get done a lot faster than 2 hours but it is what it is!

More importantly, I wasn’t as fatigued as I thought I’d be.

Simple Shrimp Fajitas!
•
Sautéed shrimp, homegrown bell and jalapeño peppers and red onion
•
Homemade salsa and guacamole!
•
Took no more than a half hour for prep and cooking!

10 mile bike ride against the wind on the way back tested me 😅

63 mile bike ride to the shore in a little over a month seems like it’s going to suck but we’ll give it a try 🚴
