Weeknights in January can get monotonous trying to come up with nutritious family meals every single evening. Keep it simple with a mix of: greens, fiber, omega-3’s, immune-boosting vitamins, protein and antioxidants. This weeknight ‘greens and beet’ salad is tossed with champagne vinegar, pomegranate and olive oil dressing and topped with toasted walnuts, basil and pomegranate seeds.
