πŸ€’ Feeling under the weather? 🀧 Bring on the tofu noodle soup! Last week my entire household got sick. Runny noses, coughs, fevers, and an ear infection meant nurse mommy was in full force. This vegan tofu noodle soup by was just what we needed, and I'm pretty excited that I have some leftover for lunch today. This recipe is a delicious vegan version of classic chicken noodle soup, with tofu swapped in for chicken. The secret trick with the tofu is to bake it first so it's chewy, then add it to the soup toward the end. πŸ™ Thanks for creating this awesome recipe! πŸ™

I finally found a tuna salad recipe that my kids and I like! For anyone out there who has transitioned kids to a plant-based diet, then you know there are a few favorites that are extremely difficult to replace. For my family, it's tuna salad. This recipe by is the closest match to the original version I used to make for my kids, and with a few minor tweaks we are now all enjoying it and phasing out the real tuna. I swapped in dill pickles instead of the sweet pickle relish and omitted the celery seed because my 4 year old couldn't handle the tiny brown specks in her tuna salad. I like to add some extra pickles to mine, as you can see! πŸ₯’ Look up for the full recipe!

My two-year-old son, Parker, has been asking me to make Cheezy Broccoli Soup for dinner every night this week. So last night his dinner wish came true! I've been making this Cheezy Broccoli Soup recipe by for a couple years, and it remains a favorite. I usually take it out of rotation during the summer when it's way too hot for soup, then reintroduce it when when the weather cools down. Whipping up a stir fry with bright, fresh vegetables is one of my favorite dinners to cook. I follow an asparagus cashew stir fry recipe by and then serve it with brown rice and avocado slices. It's simple, quick, and healthy! (And my kids both like it, which is a big deal in my house!)
