📍Ελληνικό, αγαπημένο φαγάκι σήμερα - Κοτόπουλο με αρακά αυγολέμονο - μυρίζει Ελλάδα και ΜΑΜΑ βρε παιδί μου!!!
🙌 Greek Chicken with Peas and Lemon sauce👌🏼🙏
One of the most beautiful spring dishes that the Greek enjoys and loves is peas with various other veggies like potatoes, carrots and artichokes.
Ingredients:
• 14 oz/400g peas
• 1 large onion diced
• 3 green onions chopped
• 1 leek chopped
• 2 small carrots (optional)
• 1 potato diced (optional)
• 6 chicken thighs
• Salt
• Pepper
• 1 tbs chicken bouillon
• 1/2 cup olive oil
• 3 tbs of dill (finely chopped)

Avgolemono:
• 1/3 cup freshly squeezed lemon
• 1 egg

Instructions:
• Finely chop the onion and sauté in olive oil. Season the chicken generously with salt and pepper and add it to the pot with the onions.
• Add the peas and continue sauté.
• Add the chicken bouillon and 2 cups of water and let them boil for 5 minutes. Then, lower the heat to 2 (on a scale from 1 to 9), close with the lid of the pot and let it simmer for 30 minutes.
• Now you can either add just lemon and fresh dill and you are ready or prepare avgolemono sauce.

Avgolemono sauce:
• Beat the egg white on it's own until frothy, then add the yolkand continue the beating. Add the lemon juice and beat well. Take the mixture and pour it into the chicken and peas (making sure the food is lukewarm, otherwise the egg will cook). Stir carefully and you are done!

🌱Spicy Green Beans with Burrata🌱⠀
Burrata is considered like those famous kinder eggs, with the amazing chocolate shell and the magic toy inside. Burrata has a solid outer curd made from fresh mozzarella, which is formed into a hollow pouch, then filled with a soft, stringy curd and fresh cream. It has a milky, buttery flavor that's rich without overwhelming your taste buds.⠀⠀⠀⠀
💚In this recipe I paired the burrata cheese with some pan seared green beans, garlic, lemon zest, almond slices and red chili flakes.💚 ⠀⠀⠀
❗Don't forget to drizzle some extra virgin olive oil at the end, for the final finishing touch❗⠀⠀⠀⠀⠀

🥒🌱Greek Zucchini Fritters⠀
Kolokithokeftedes (aka Greek Zucchini Fritters) is a great appetizer or a light lunch all year round since zucchini noodles are now available to most grocery stores (if you don’t want to bother make them yourself)! This recipe is Keto friendly, Gluten Free and Vegetarian and it takes tops 10 minutes to make it! ⠀

Easy | Delicious | Low Carb | Vegetarian| Gluten Free⠀⠀
Ingredients⠀
✔️Fritters⠀
• 1 cup zoodles (squeezed really well to remove excess moist)⠀
• 3 tbs of fresh herbs like mint, spearmint and parsley (chopped)⠀
• 1 scallion, (white and light green parts finely chopped)⠀
• 1 large eggs, lightly beaten ()⠀
• 1 tsp baking powder⠀
• 1/3 cup almond flour ()⠀
• Salt and pepper⠀
• 4 tbs olive oil⠀⠀ ⠀
✔️Toppings⠀
• Chopped scallion⠀
• Chopped fresh herbs⠀
• Dollop of sour cream⠀
• Lemon wedge⠀⠀
Directions⠀
• Make Fritters: Lay out a layer of paper towels and spread out grated zucchini. Sprinkle zucchini with salt and let sit for at least thirty minutes and up to an hour. Squeeze out all excess moisture from zucchini.⠀
• Put drained zucchini in a large bowl with rest of the ingredients. Stir in the almond flour until dough comes together, making a dough that can easily be formed into patties.⠀
• Heat olive oil in a medium skillet over medium high heat. Fry patties until golden brown on both sides and cooked through but still moist, about 2-3 minutes per side. Serve with some sour cream or tzatziki alongside.⠀⠀
Note⠀
• Kolokithokeftedes goes amazingly with Tzatziki on the side!⠀⠀⠀

🥬Bok Choy with Ladolemono dressing🥬
I am seriously obsessed with Bok Choy, have you ever tried it?
If not pay attention❗️❗️❗️
Along with being crunchy and delicious, bok choy is full of fiber, vitamins, minerals, and other nutrients that make it a beneficial addition to your diet. Like other dark, leafy greens, it's full of antioxidants and other compounds that help to promote better health.

And for those skeptical and trying to compare it with spinach:
In equivalent raw weight, bok choy contains more vitamin C, vitamin A, and some other nutrients than spinach and around the same amount of calcium. 💥💥💥🎆🎆

In this recipes I just steamed to keep all the nutrients and used one lemon 🍋, squeezed and 1/4 cup of extra virgin olive oil 🫒. Salt and pepper to your like!!!
Top it with black sesame seeds, that's it!!!
