A good friend of mine has requested professional sharpening and a minor tip repair on his chef’s knife. My approach focuses on preserving edge integrity by carefully removing material from the spine rather than the cutting edge whenever possible. I take the time to evaluate all repair options to ensure the knife receives the highest level of craftsmanship and long-term performance.

This knife has a long history with me. Bought for me as one of my first knives when I got into cooking almost 8 years ago, it's now been passed down to one of my sous chefs. Over the years of maintenance, it's been worn down into the scallops of the blade, so I took it home to give it a proper edge and some adjustments to the tip. It's moments like these that make me proud of what I'm doing for others.

Today's restoration project involved a stunning Scandinavian-style fixed blade knife that required a new edge, and I thoroughly enjoyed working on it.😍
