Just because it’s 🌮 doesn’t mean they have to be JUST tacos right? Well I’m switchin’ it up with this Mexican Casserole. This was the perfect dish to throw a bunch of items in that just need to go. I had everything but fresh cilantro and cheese. Just brown 1lb of ground beef/Turkey/chicken(whatever you want) and add taco seasoning. I then added white onions, a can of black beans, half a bag of frozen corn, three fresh jalapeños, four blue corn tortillas to line the bottom of the pan, topped with shredded Mexican cheese and cilantro. Pop it in the oven for 30 minutes @350 and you’re set!
