Protein Balls β’ The perfect snack to pop! No bake and gluten free too. Perfect for the entire family and sports season too!
* 2 cups assorted raw nuts I recommend 1 cup raw cashews + 1/2 cup raw pecans + 1/2 cup raw almonds; (use at least 1/2 cup cashews)
* 2 cups unsweetened coconut flakes
* 1 cup hulled raw h**p seeds
* Β½ teaspoon kosher salt
* 1 Β½ cups raw almond butter
* 1/4 cup honey
* 1 teaspoon pure vanilla extract
* 1/2 cup soaked chia seeds
* 1/2 cup miniature chocolate chips I like
In the bowl of a food processor fitted with the steel blade, place the raw nuts, salt, and 1 cup of the coconut flakes. Pulse the mixture until the mixture resembles coarse crumbs (3 or 4 times).
Microwave the almond butter and honey mixture in a large microwave-safe bowl for 30 seconds to loosen the mixture. Add the nut and coconut mixture, the h**p and chia seeds and the remaining coconut to the almond butter and honey and mix until well-combined. Allow the mixture to cool fully, and then mix in the chocolate chips.
Scoop the mixture by the heaping tablespoon, roll each portion tightly into a golf sized ball between your palms. Put onto a baking sheet lined with parchment paper. Put baking sheet in fridge to chill. Store in a glass airtight container. ENJOY! π

Prep these today for your week!
Ingredients
Silicone muffin pan or silicone muffin liners
8-10 eggs
1/4 cup each of chopped vegetables
I used onion/ red pepper/ mushrooms
1 cup turkey sausage ( any lean meat works!)
2 tablespoons of cheese
Salt & Pepper
SautΓ© vegetables in 1-2 tablespoons olive oil. Add 1 tablespoon veggies to each muffin cup. SautΓ© your meat choice ( can omit) add a teaspoon to each muffin cup.
Scramble eggs in a bowl. Season with salt and pepper. Pour eggs 1/2 to 3/4 up in muffin cup. Sprinkle some cheese on top of egg cups. Bake @350 for 25 minutes. Let cool and enjoy ! Store in a glass container and microwave for 20-30 seconds when ready to eat.
