Aussie favorite Sausage rolls just out the oven!

I can’t wait for winter when there is every excuse to whip up some delicious hearty soups. is such a versatile veg. Try this cauliflower and leek soup . We use a head of cauli medium chopped with core removed, any color, one spanish onion corse chopped, one potato corse chopped and two medium sized leeks washed and thinly sliced-whites and light green only. Toss the lot with some olive oil , sea salt, cumin, nutmeg and coriander and pinch of chilly powder. Place in oven on baking sheet for an hour on 375F until fork tender. Put it all in your blender with 2 cups of good veggie broth and give it a whiz until you reach the texture you want. Adjust seasoning to taste and add the juice of half a lemon. Place into a pot on stove and bring to a slow boil. Ladle into bowls and top with fresh parsley, gorgonzola crumbles (optional) and thin sliced green onions with a dash of fresh ground cracked pepper.
